In a big bowl add grated potatoes, then add atta, rava, salt, haldi, red chili powder, garam masala, amchur, ajwain and oil
Mix everything and knead a smooth but stiff dough.. add water little by little..
Keep it aside for 5mins
In the meantime heat oil for deep frying
In another Kadai heat oil add red chili, panch phoran and let it crackle
Now add curry leaves and chopped tomatoes.
Also add salt, red chili, haldi ànd cook covering all the way
When tomatoes are mushy add little water to adjust the consistency and jaggery
Now make equal balls from dough.
Roll the balls into Puris apply generous amount of oil for rolling
Add it to the hot oil and cook one side
When done flip and cook on the other side..
Serve hot aloo Puri with chutney
